If you are looking for a recipe that is out of the ordinary, here it is! Kohlrabi stuffed with small vegetables will offer you a meal that is both healthy and tasty. This vegetable was once eaten during World War II, but it was later abandoned, as it was too reminiscent of rationing and conflict. Nevertheless, it has many benefits, such as its richness in fiber, its poverty in calories and its rapid assimilation by the body.
Ingredients:
For 4 people
4 kohlrabi
2 yellow onions
400 g mushrooms (porcini mushrooms)
4 carrots
Cumin, nutmeg
Salt, pepper
The steps:
1. Before starting the recipe, preheat your oven to 200 °C.
2. Then peel and hollow out the kohlrabi leaving 1 cm on the edges. Keep the pulp aside.
3. Immerse them in saltwater for about 8 minutes.
4. Meanwhile, clean the vegetables. Peel the carrots and onions, and cut them into small dice.
5. Rinse the mushrooms and slice them.
6. Next, chop the heart of the celery.
7. Now, sauté everything in a drizzle of olive oil for a few minutes. Season with salt, pepper, as well as cumin, and nutmeg at your convenience.
8. Drain the kohlrabi and fill each of them with vegetable toppings.
9. Place them in a previously greased baking dish and cook for about 20 minutes.
You can serve your stuffed kohlrabi by accompanying them with rice.
