500g cottage cheese

100g sugar

90g flour



Facultative:

Zest of half a lemon (or 1 half CAC of liquid vanilla)

Preparation

Step 1 – Turn on the oven at 180°C

Mix in a bowl the cottage cheese and sugar. Separate the whites from the egg yolks. Stir in the egg yolks in the cottage cheese/sugar mixture.

Step 2 – Add the flour and mix.

Step 3 – Add the lemon zest or vanilla.

Step 4 – Mount the whites in very firm snow, and gently incorporate them into the mixture.

Step 5 – Pour the prepared cottage cheese, egg, and sugar into a hinged mold of about 20cm in diameter, previously buttered or lined with fat with a bomb.

Put the cake in the oven at 180 ° C for 30min.

Remove from the oven and let cool for 1 hour before unmolding

Biscuit

930 ml (3 3/4 cups) unbleached all-purpose flour

15 ml (1 tbsp) ground ginger

5 ml (1 tsp) baking soda

5 ml (1 tsp) ground cinnamon

2.5 ml (1/2 tsp) ground nutmeg

2.5 ml (1/2 tsp) salt

180 ml (3/4 cup) softened unsalted butter

250 ml (1 cup) packed brown sugar

125 ml (1/2 cup) molasses

1 egg

Icing

1 egg white

375 ml (1 1/2 cup) icing sugar

Decoration

Multicolored Jelly Beans or other jujubes, sticks and/or small candy canes, Yummies style chocolate lozenges, the licorice of different shapes and colors, green and/or red mints


PREPARATION

Biscuit

In a bowl, combine the flour, ginger, bicarbonate, cinnamon, nutmeg and salt. Reserve.

In another bowl, cream the butter with brown sugar and molasses with an electric mixer for about 2 minutes. Add the egg and mix well. At low speed or with a wooden spoon, stir in the dry ingredients and mix until the dough is smooth and homogeneous. Add 15 ml (1 tbsp. ) of water as needed.

Shape the dough into 2 discs. Wrap with plastic wrap and refrigerate for 1 hour.

Place the rack in the center of the oven. Preheat oven to 190°C (375°F). Line two cookie sheets with parchment paper.

On a lightly floured worktop, knead one disc of dough at a time with your hands for about 1 minute. Lower the dough to a thickness of about 3 mm (in). Cut cookies using cookie cutters. Reuse scraps. Divide the cookies of the same size on the same plate.

Bake, one plate at a time, for about 10 minutes or until the outline of the cookies is lightly browned. Allow cooling completely.

Icing

In a bowl, whisk the egg white and icing sugar with an electric mixer until the icing is homogeneous.

Using a pastry bag filled with icing and equipped with a small, undy socket, garnish the edges of the pieces of the house and assemble it.

Allow drying 24 hours before decorating.

THE TIP

100% chocolate sweets, digestible and healthier than industrial sweets. To succeed, keep the chocolate at the right temperature, and melt it in small batches to prevent it from hardening before being poured into the molds. This chocolate can be kept for 15 days in an airtight box.

What is Paxlovid?

The American pharmaceutical company Pfizer has developed an antiviral treatment, marketed under the name Paxlovid. If granted marketing authorizations, this pill, administered orally, could be taken at home in the first days after the onset of symptoms in case of Covid-19 infection. Paxlovid is a treatment similar to Molnupiravir, an antiviral drug developed by the American pharmaceutical company Merck. Already authorized since the beginning of November in the United Kingdom, this antiviral has been the subject of an application for emergency authorization in the United States, which must be examined on November 30 by the FDA. The French government would have ordered 50,000 doses, said Health Minister Olivier Véran at the end of October, pending validation by the European Medicines Agency.


How effective is it against Covid?

Paxlovid would be able to reduce the risk of hospitalization or death by 89%

In an interim phase 2/3 randomized, double-blind analysis conducted on more than 1,800 out-of-hospital patients in July 2021, all with at least one risk factor for developing a severe form of the disease, Pfizer showed that Paxlovid was able to reduce the risk of hospitalization or death by 89% compared to the placebo group,  reports the laboratory in a press release of November 5, 2021. Each patient received oral treatment or placebo every 12 hours for 5 days. 


For patients who received Paxlovid or placebo within 3 days of the onset of symptoms: 


  • Hospitalizations: 0.8% (3 of 389) of patients who received Paxlovid were hospitalized up to day 28 compared to 7% of patients (27 of 385) who received placebo.
  • Death: No deaths were reported in patients who received Paxlovid versus 7 in patients who received placebo.

For patients who received Paxlovid or placebo within 5 days of the onset of symptoms: 


  • Hospitalizations: 1% (6 of 607) of patients who received Paxlovid were hospitalized up to day 28 compared to 6.7% of patients (41 of 612) who received placebo.
  • Deaths: No deaths were reported in patients who received Paxlovid versus 10 in patients who received placebo.

"This data suggests that our oral antiviral candidate if approved or authorized by regulatory authorities, has the potential to save patients' lives, reduce the severity of COVID-19 infections and eliminate up to 9 out of 10 hospitalizations," said Albert Bourla, Pfizer's Chairman and Chief Executive Officer. Subject to approval or authorization, it could be prescribed more widely as a home treatment to help reduce the severity of the disease, hospitalizations, and deaths, as well as the likelihood of infection. What is the composition of Paxlovid?

Paxlovid is composed of two molecules. The first PF-07321332 is the active agent that prevents the virus protein from replicating. The second is ritonavir, a protease inhibitor normally used for the treatment of HIV infections. Mode of action: how does Paxlovid work?

What are the side effects?

Of the patients who participated in the study and received Paxlovid, 1.7% experienced serious adverse events and had to stop treatment. The active substance contained in this medicine, ritonavir, can cause side effects such as:

  • throat irritation or cough
  • headache and dizziness
  • rash and itching

 PREPARATION

1. Preheat the oven on.5/150°.

2. Separate the whites from the egg yolks. Beat the yolks with the sugar to get a sparkling and very clear mixture. Add the Maïzena, rice flour, yeast, and a small pinch of salt. Beat the whites with a pinch of salt in very firm snow. Gently incorporate the snow whites into the previous preparation.

3. Pour into a rectangular mold of 20 x 30 cm, lined with parchment paper. Bake the biscuit for 15 minutes in the oven. Let cool on a rack and remove the paper when the cake is cold. Cut it into fir trees, with cookie cutters.

4. Peel the mango and cut it into very thin slices, then tiny dice, keeping the juice. Cut the fir trees in half in thickness. Garnish the base with diced mango, and drizzle with a little juice.

5. Mount the cream in very firm whipped cream, then spread it over the mango. Cover with the other part of the fir trees, making it adhere well.

6. Melt in a water bath the chocolate cut into squares with the milk. Smooth the mixture and spread it on the fir trees. When the icing is taken, decorate with meringue and chocolate beads. This cake can be prepared the day before (to be placed in a cool place).


THE TRICK 

A fairly light cake because the biscuit does not contain fat. Do not sweeten whipped cream, it is useless. You can serve the fir trees accompanied by cups of cut fruit (mango, pineapple, melon, etc.) and fresh lychees.
